Zesty kale salad with avocado

LUNCH / 20 MIN / 2 PAX / EASY 

INGREDIENTS

Zesty Kale Salad 

  • 2 large bundles of curly kale, large stems removed and roughly chopped

  • 3 tbsp lemon juice 

  • 1/2 tsp sea salt 

  • 1 tbsp maple syrup 

  • 200g cooked green lentils (half a can) 

  • 1/2 an avocado, sliced thinly 

  • 2 handfuls walnuts, roughly chopped

  • 3 small radishes, thinly sliced (preferably with a mandolin) 

  • 2 handfuls fresh herbs (mint, tarragon, parsley)

  • Topped with Pickled red onion and sesame seeds 

HOW TO MAKE IT

  1. Add the washed and cut kale in a medium sized mixing bowl. Add your lemon juice and sea salt and then massage the kale with your hands for 30 seconds - 1 minute until it turns bright green. 

  2. Add your maple syrup, lentils, avocado, walnuts, sliced radish and fresh herbs and gently give everything a big toss. 

  3. Top with pickled red onion and sesame seeds!
