Tomato Salad with Mozzarella & Mint

Sometimes it doesn't take that much to get a huge pay-off. Like in this wonderfully simple and delicious salad. Quite similar to the Italian Caprese salad, which is just tomatoes and mozzarella cheese plated in an alternating pattern, this dish capitalizes on simplicity. The sweetness and light acidity from the tomatoes gives some balance to the creamy and soft umami of the mozarella, while the mint leaves gives a nice refreshing feel. Sounds pretty good, doesn't it?

  • Small tomatoes
  • Mozzarella
  • Fresh Oregano
  • Fresh Mint
  • Olive Oil

How to make it

  1. Cut tomatoes and place on a plate.
  2. Toss Mozzarella in big chunks and add to tomatoes. Tip: Take Mozzarella out of the fridge an hour or so before you want to use it. The flavour will be much better!
  3. Sprinkle with olive oil, salt, fresh oregano and mint.
