Sweet Potato Tortillas

A delicious and healthy meal that is not only easy to make but also healthy. These sweet potato tortillas will blow your mind! 

SIDE - 3 SERVINGS - 120 MIN - EASY

Ingredients:

  • 2-3 sweet potatoes

  • 1-2 cups all purpose flour

Instructions:

  1. Stab the sweet potatoes wioth a fork, place on a baking tray and bake for about 45 min up to one hour

  2. Peel and mash with a fork, leave to cool

  3. Once cooled, add flour and mix either by hands or mixer until the soft dough ball is formed

  4. The dough should be soft but not sticky

  5. Divide to 6 equal pieces

  6. Roll out each tortilla to be about ½ cm thick or little bit less, not too thin

  7. Place tortilla in a hot pan over medium heat and cook for about a minute each side

  8. Stack the cooked tortillas in a clean kitchen towel and cover. It will allow them to stay flexible

  9. Fill with your favorite tortilla fillings – falafel, veggies, cheese, sauce and just enjoy!
