Potato soup

This soup is perfect both served hot and cold. With a thick texture it´s absolutely delicious, comforting and filling. 

SOUP - 2 SERVINGS - 20 MIN - EASY

 Ingredients: 

  • 1 onion 

  • 1 garlic clove

  • 3 medium carrots

  • 2 small potatoes 

  • ½ zucchini 

  • 1 tsp Miso

  • ½ vegetable broth (bouillon cube)

  • Fresh thyme (one bundle) 

  • 1 piece bay leaf

  • ¼ tsp sugar

 Instructions:

  1. Saute the onions and garlic in a pot - cut the carrots, potatoes and zucchini into small cubes og put into the pot with thyme, miso, sugar, bouillon (vegetable broth) and one bay leaf. Add water till it covers the vegetables

  2. Cook the soup for a minimum 10 minutes or until the potatoes and carrots are tender but not too soft. Take out the bay leaf and the thyme and add salt and pepper as needed.
