Ever thought about making a jam out of your kiwis? It makes them last longer, it’s sweet and delicious, and it can even make a kiwi-hater go bananas over those green seedy fruits. This recipe is for quite a lot of jam, but just wait, you’ll easily it all — or give it away as a present. Here’s how.
- 1l of sugar
- 2kg of kiwis, in halves
- 0.5dl of fresh lemon juice (around 2 lemons)
- Scoop the flesh of the kiwis into a pot and discard the skins. Mash the flesh until it’s smooth. Mix together with sugar and lemon juice.
- Bring the mixture to a boil and then reduce heat to medium-low. Let simmer for 15 minutes, or until it’s thickened. Stir occasionally.
- At the same time sterilize jars and lids, by submerging them into boiling water and let them stay there until the jam is ready to pour into the jars.
- Pour jam into jars and let cool to settle → eat up! OR pour jam into jars and cover them with boiling water. Boil for about 10 minutes, but don’t let the jars touch the bottom of the pot, use a cake rack for example, to place in the bottom.
Ready to eat.
Kiwi/Avocado Salsa Verde
If you are not a fan of the sweet kitchen, try this salsa for your savory dishes. Use it for Mexican food or simply as a snack with crisps or tortillas.
- 5 kiwis, peeled and diced
- 2 onions (spring onion or shallots), chopped
- 1 avocado, diced (not mashed, this is salsa, not guacamole!)
- Chopped cilantro
- A half red onion, chopped (if its too strong for you, rinse it under cold water to remove the top of the strength)
- Juice and zest fom 1–2 limes
- 1 clove of garlic, minced
- 1 chili or jalapeño (optional)
- Sea salt
Mix and stir, eat and enjoy!
The easiest, most simple, of the three must the the chips. Just take a look!
Cut as many kiwis as you like into very thin slices (preferable on a mandoline, but otherwise with a sharp knife). Place the slices in a single layer on a backing sheet and bake at a low temperature in the oven for about 45 minutes. They should be a little brown, but not burned! Let cool afterwards. When they are done and cooled they are tangy and gummy, almost like candy. Enjoy!
