Fried Kale with Parmesan Cheese and Lemon
Kale is great, since it is packed full of nutrients, is super filling and slightly grassy/earthy flavour. This recipe is perfect as an addition to whatever else you might have planned for dinner, but it also works wonderfully well as a light lunch or appetizer. In this recipe it’s important that you remove the stems, since they are quite fibrous, which makes them chewy, stringy and hard to eat. You don’t need to just throw them out though! They’re still packed full of flavour and nutrients, so if you have a juicer or smoothie maker, then this is a great way to get all of your leftover veggie cut-offs used. Save them in a plastic bag or container in the freezer, until you’re in the mood for a nice and refreshing healthy drink!

10 stalks of green kale
½ a lemon, juiced
Salt, pepper and olive oil
HOW TO MAKE IT
Start by finding all of your ingredients, washing the green kale, and patting it dry.
Pick or cut off the leaves, and remove the stem from the kale. Toss it in the juice of ½ a lemon, salt, pepper and 1 tbsp of olive oil.
Heat up a pan, and add the kale when it is hot. Stir occasionally, until it has started to become golden brown around the edges.
Serve right away, topped with grated parmesan, a bit of lemon juice, salt and pepper. Enjoy!
