Crudité Salad

with tahini dressing

Fancy words aside: Crudités is as simple as a plate full of raw, crispy & fresh veggies. Try this pretty and tasty version with razor-thin jerusalem artichokes, apples and fennel and sunflower seeds & tahini dressing - it will blow your mind. 


Crudite salad with fennel, jerusalem artichokes and apples


Here's what you need

  • 1/2 fennel 

  • 2 Jerusalem artichokes

  • 1 apple 

  • Fresh thyme

  • 1 dl sunflower seeds 

  • 1/4 dl sunflower oil 

  • 1/2 dl water 

  • 1 tbsp lemon juice 

  • 3 tbsp olive oil

  • Chili flakes 

Here's how to make your crudité salad

  1. Slice all the fennel, apple and jerusalem artichokes on a mandolin (or cut it extremely thin), put it all in a bowl with ice water. Save the fennel leaves for later (the top that looks like dill.

  2. Then toast the sunflower seeds on a dry pan until golden brown. Put the seeds in a blender and add the oil. Let it blend until you have a paste. Then add salt, pepper, chili flakes to taste and water. Don’t add all the water at once. When it has a consistency that you like, your dress is done. 

  3. Mix 1 tbsp lemon juice, 3 tbsp olive oil, salt and pepper in a bowl. Then add the sliced apple, jerusalem artichokes and chopped fennel leaves.

  4. Put the tahini dress on a plate and put the fennel on top. Then add the sliced apple, jerusalem artichokes and chopped fennel leaves. Add some fresh thyme, a bit more olive oil, salt n pepper. Your fancy salad is done.
