Baked Celeriac Wedges with Tahin/Herb Dressing

These delicious celeriac wedges are a perfect healthy alternative to potato wedges. They are low in calories and Celeriac is a concentrated source of many nutrients, including Vitamin C and Vitamin K.

Ingredients:

  • 1 small celeriac (around 500 g)

  • 1 garlic clove

  • ½ lemon, juice

  • 1 handful fresh parsley

  • 1 handful fresh basil

  • 4 tbsp. tahin

  • 7 dl water

  • 1 tsp. honey

  • Olive oil, salt, pepper

Instructions:

  • Get all the ingredients out and turn the oven on 200 degrees

  • Scrub the celeriac and cut in boats (wedges). Toss with some olive oil, salt, pepper and some cumin if you have it. Bake for 35-40 minutes, when the oven is ready

  • While you wait, mix you Tahin/herb dressing. I used a mini blender, but you can easily chop everything in hand. It just takes a bit longer, and everything has to be chopped as fine as possible

  • Mix garlic, herbs, Tahin, lemon juice, water, honey and a bit of salt & pepper in a mini blender or chop fine by hand. Mix well together until you have a smooth dressing. Add more/less water for your liking!

  • Serve your wedges with your Tahin/herb dressing as a side dish. YUM!
