Spiced orange millet porridge

Millet is one of those undervalued or forgotten foods that you should urgently reintroduce more often in your diet. Millet is not only easily digestible, but also provides a large amount of magnesium and protein. In terms of iron, it is one of the frontrunners compared to other grains. This precious grain contains two to three times more iron than wheat and thus provides an optimal contribution to blood formation.

BREAKFAST / 20 MINUTES / 2 PAX / EASY

INGREDIENTS

  • 120 g Millet

  • 600 ml Plant based milk or (half water half plant based milk) more if needed

  • ½ tsp cinnamon

  • 1-2 tsp orange zest

  • 2 oranges cut into slices

  • 2 dates or other dried fruits

Toppings if desired:

  • 2 tsp cashew butter

  • 2 heaped tbsp yoghurt

  • Hemp seeds

  • Any fruits and nuts

HOW TO MAKE IT

  1. Grate the peel from one orange with a grater/zester and save it. Cut off the peel of the oranges and slice them. Take the stone out of the dates and cut them into thin slices.

  2. In a blender, pulse millet. Millet should be roughly half grain, half flour consistency.

  3. Add plant-based milk and a pinch of salt to a saucepan and heat. Stir in the millet, orange zest and cinnamon, bring to a boil, reduce to a simmer, cover, and cook for 15-20 minutes. Stir the porridge occasionally to check consistency and add dates 3 minutes before end.

  4. Place the millet porridge on bowls and top it with the orange slices and cashew butter. Serve with the desired toppings.
