Vegan Patties with Aubergine and Dill

For something a bit different, give this vegan patty recipe a try! By mixing together aubergine, miso, seawood and other flavourful ingredients, you get a result packed with flavour - something which can impress even those who are skeptical of aubergines!

Ingredients 

  • 3 cloves of garlic

  • 1 onion

  • 1 eggplant

  • 2 carrots

  • 1 can of white beans

  • 1 tsp miso *

  • 2 tbsp finely chopped nori or seaweed powder *

  • 1 tsp apple-cider-vinegar *

  • 1 tbsp lemon juice

  • 1 handful dill

  • Salt and pepper after taste 

  • 2 tbsp chia seeds

  • 100 g flour

  • Oil for frying

    * Can be left out if necessary

How to make it

  1. Prepare your veggies by washing the aubergine and peeling the carrots. Cut the aubergine, onion and garlic into medium sized bites and fry them on a pan for 10 minutes, in some oil and salt, at medium heat. Hvile the aubergine is frying, grate the carrots into a large bowl.

  2. When the aubergine is done, put it into a foodprocessor together with the white beans, miso, seawood powder, lemon juice, dill, vinegar, salt and pepper. Blend it all together until it has a "creamy" consistency. 

  3. Pour the blended aubergine into the bowl with the grated carrots and mix it all together. Then mix the chia seeds and the flour into the mix, and give it a good stir till its completely combined. Let the dough rest in the fridge for 15 minutes. 

  4. When the dough is done resting, it's time to fry them on the pan. The pan should be at medium heat, form the dough into 10-12 patties and fry them on each side for 5 minutes. 

  5. Serve your patties with a delicies salad and a good dressing!
