Sweet potato pasta



  • 200-250 fresh pasta

  • 300 g sweet potato

  • 1 red onion

  • 2 cloves of garlic

  • 250 g mushroom 

  • Juice of ½ lemon

  • 1 dl water (from the pasta)

  • Salt, pepper to taste

  • Fresh thyme and shredded parmesan for serving

Sweet potato pasta with mushrooms and fresh herbs in a pan

How to do it 

  1. Turn your oven on 200 degrees and peel your potatoes. Cut your potatoes & onion in mouth sized pieces, add whole cloves of garlic, and toss in some olive oil, salt, pepper and give it 20 minutes in the oven (when its warm)

  2. While you wait. Clean your mushrooms and cut them in quarters. Sautee till golden with some salt/pepper. Set aside

  3. Boil some slightly salted water and cook your pasta. Remember to safe 1 dl of the pasta-water 

  4. After 20 minutes your potatoes are ready. Blend it with lemonjuice, pasta-water, and taste with salt & pepper 

  5. Mix your pasta with your sweet potato-sauce, mushrooms and serve with fresh thyme & shredded parmesan. Enjoy!
