Melon-Tomato Salad with Bronze Fennel
Summer is full of life, and brings some of the most delicious and exotic fruits to the table in their prime. Sometimes the heat can take over though, and it can be nice to enjoy a dish which is simple and doesn't need any cooking or heat, just fresh produce, packed with flavour and ready to refresh your spirit.
Very easy — ready in 5 minutes — starter or side
Melon in a salad and topped with the licorice sweetness of the bronze fennel herb? Hell, yeah!
What you need
- Half of a melon
- Bronze fennel
- 1 buffalo mozzarella
- Olive oil
Here’s how to make it
- Remove the cores from the melon and cut into equally big chunks. Cut tomatos in half. Place in a bowl
- Tear the mozzarella into pieces and add to the bowl. Sprinkle with salt & olive oil.
- Decorate with bronze fennel and edible flowers, if you have.
Serve with a slice of toasted bread and a glass of wine :)
