Cucumber & Avocado salad

Fresh cucumber with rich creamy avocado and lemon dressing. This salad is so refreshing, it can be perfectly paired with juicy tomatoes!

Do you also feel bad for throwing out the avocado pits and making them go to waste? Well it doesn't have to be that way! Here are a few inspirational ideas as to what you can use that sturdy little ball for.
Since the avocado pit is the seed of the avocado, you can grow your own avocado plant! Clean the pit, locate the bottom and top of it (the bottom usually has a small bumb or a lighter colour). Insert three toothpicks around the top of the pit, being careful to not go too far into the center. Place it in a glass of water, so only the bottom is submerged in water, and then let it sit for a few weeks, regularly changing the water. Once the pit starts to sprout you can transport it to a pot, covering it with soil so a bit of the top is still poking out. Now it's time to just be patient and let it grow!
Other ideas if you're feeling particularly creative, is to use a small knife or cutting tool to carve designs into the pit, making it into a decorative piece - there's lots of inspirational images to find online. Or if you're feeling fashionable, you can extract natural pink dye from the pit. The possibilities are endless!

A bowl of cucumber and avocado salad


  • 3-4 medium cucumbers

  • 2 medium avocados

  • 1 lemon

  • olive oil

  • salt

  • pepper

  • 2 spring onions (or one small purple onion)


  1. Wash and cut cucumbers. Make sure you remove the middle because it makes salad watery

  2. Chop avocado

  3. Chop spring onions

  4. Combine all ingredients and season with salt, pepper, olive oil, juice of half a lemon and in the end add zest from one lemon

  5. Cool and serve
